  • 2 cups Milk you can use any milk of your choice, such as cow's milk, almond milk, or coconut milk
  • 1/4 cup Sugar adjust to your sweetness preference
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon ground
  • 1/4 teaspoon Nutmeg ground
  • 1/4 cup Raisins or other dried fruits, optional
  • Chopped nuts or toasted coconut flakes for garnish optional

Instructions
 

  • Prepare the cauliflower rice: Wash and dry a medium-sized cauliflower head. Cut the cauliflower into florets, and using a grater or food processor, grate the florets into small rice-like pieces.
  • Cook the cauliflower rice: In a saucepan, combine the grated cauliflower rice and milk. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Cook the cauliflower rice in the milk, stirring occasionally, for about 10-15 minutes or until the cauliflower becomes tender and absorbs some of the milk.
  • Sweeten and flavor the pudding: Add the sugar, vanilla extract, ground cinnamon, and ground nutmeg to the saucepan with the cauliflower rice. Stir well to combine all the ingredients. If you're using dried fruits like raisins, add them to the mixture at this stage.
  • Continue cooking: Allow the pudding to simmer for an additional 5-10 minutes, stirring frequently to prevent sticking. The pudding should thicken and achieve a creamy consistency as it cooks.
  • Serve: Once the pudding has reached your desired thickness, remove the saucepan from the heat. Let the pudding cool for a few minutes before serving to allow it to set further. You can serve the cauliflower rice pudding warm or chilled, depending on your preference.
  • Garnish (optional): Before serving, sprinkle some chopped nuts or toasted coconut flakes on top for added texture and flavor.
